The Best I Ever Had in South Carolina: Dabo Swinney

By:Bob Gillespie

WHO – Dabo Swinney became Clemson’s head football coach in 2008 after five seasons as wide receivers coach and assistant head coach. Now in his ninth season in charge, he has led the Tigers to 11 bowl games and two trips to the College Football Championship, winning the National Title in 2016. His record before the 2017 season was 89-28, including 28-2 in the 2015 and 2016 seasons.

HIS FAVORITE SC DISH – “The best thing I ever had in South Carolina is the brisket barbecue from Smokin' Pig in Pendleton.”

WHAT MAKES IT SPECIAL – “The brisket at Smokin' Pig is awesome. I like a lot of South Carolina foods – the steak at Halls Chop House is big-time; I love the blackened chicken at Pixie & Bill’s and the bisque at Blue Heron; and I love Krispy Kreme doughnuts – but real food? It’s Smoking' Pig; I love the brisket, just the flavor of it, how they char it a little bit on the edge, the burnt ends. It’s tender so you don’t have to have a knife to cut it. We bring it into the office all the time for recruiting functions and things like that. It’s awesome.”

WHAT THE CHEF SAYS – Deena Pierce, spokesperson for Smokin' Pig: “Our made-by-hand barbecue and sides will keep you coming back for more, time and time again. That’s especially true of our brisket, which we believe is the best you’ll find outside of Texas. We work all week preparing for our weekend (Thursday-Saturday, 11 a.m.-9 p.m.) celebration of all things barbecue, plus our delicious side items.”
