Join Crew Carolina and the South Carolina Aquarium's Sustainable Seafood Initiative for a five course meal featuring local and sustainable seafood dishes with wine pairings. Spend the evening with Shem Creek based local snapper and grouper fisherman, Mark Marhefka, The Boathouse on East Bay's Executive Chef Charles Arena and the Sustainable Seafood Initiative's Megan Westmeyer, as they highlight the importance of sustainable seafood and how your choices today can ensure fish for the future. The evening's meal offers five delicious courses: Kick off the evening with an Amusé Bouche featuring swordfish crudo with lemon and capers paired with Veuve de Vernay, Blanc de Blancs, Brut, NV; followed by olive oil poached amberjack with oranges and roasted beets paired with Chateau Campuget Traditional Blanc, '05; Lemon and rosemary braised local porgy with fennel, artichokes and olives paired with Chateau Campuget Prestige Viogner, '07; Roasted black sea bass with cauliflower puree, sautéed spinach and saffron sauce paired with Sancerre Blanc, '05; and finish with an apple tart tatin with homemade ice cream paired with Chateau L' Hyvernie Muscadet, '07.
